Japanese Beef for Shabu Shabu

With temperatures dropping, it's the perfect time for another Shabu Shabu meal. My husband ordered Mishima beef, or did he?

Shabu Shabu - the Perfect Winter Meal

Shabu Shabu is growing in popularity as people discover this Japanese hot pot meal. Even NPR's Kitchen Window correspondent is getting in on the act. She shares her family's hot pot recipe and a fun anecdote or two.

Mishima, Kobe or Wagyu?

Remember our lesson about Kobe beef? Wagyu is the American (and often, Australian) raised breed of cattle which originated in Japan. I can now add Mishima to the list of rare Japanese beef available here. Maybe. Ready for this?

I met my husband at the first shabu shabu restaurant we'd been to in Boston, Shabu Zen. On the specials board were three selections of "Kobe beef"

Those of you who have been paying attention know that Kobe beef is technically only that which comes from Kobe, Japan. Most of what we see here is actually Wagyu, which is derived from but not the same as, Kobe. Just as “champagne” from New York or California (or anywhere other than specified regions in France) is actually sparkling wine even if it is produced by methode champagnoise.

We ordered the “Kobe” beef special designated as “Mishima.” Shabu-zen would not be the first American restaurant, or butcher to mis-label its American born and raised Wagyu by the more familiar name of Kobe. However, a little research on Mishima seems to indicate that not only is it unlikely that what I ate was Kobe, but even less likely that it was Mishima.

I have to say this: it was superb. It was buttery and delicate and unlike any other beef I’ve had. Shabu-shabu is the perfect preparation, too. No overcooking will do for this beautifully marbled, delicate beef.

I’m still researching the Mishima versus Wagyu issue, and haven't gotten a definative answer yet. I will keep you posted. In the meantime, if you’re in Boston or another spot that offers a Wagyu option on the Shabu-Shabu menu, go for it! A quick swish in bubbling broth and you’ll be swooning. Promise.

In Boston

Kaze is another excellent choice for a shabu shabu meal. It's a larger, more upscale space. The main advantage being the size of the place allows them to accomodate larger parties. Shabu shabu is a fun meal, definately meant to be shared.
