Gourmet pasta and crimini mushrooms in vegetable broth, tomato, and gourmet olive oil base with natural food supplement for extra nutritional value.

This rich minestrone soup has a subtle, salty sea taste. The organic recipe emerged from an extended winter storm when roads were inaccessible and the pantry relatively bare. Necessity is the mother of invention. In this case, the results are simply delicious.

The addition of Dr. Schulze’s Superfood adds an extra dose of vitamins and minerals. Despite ingredients like dulse flakes and anchovies, kids will come back for seconds. Shhh! Don’t tell them it’s healthy.

Crimini Mushrooms Minestrone Soup- Organic Recipe

Ingredients

  • 32 oz Pacific Natural Foods organic vegetable broth
  • 2 cups water
  • 1 Tb Full-bodied, organic gourmet olive oil
  • 14.5 oz can Muir Glen organic diced tomatoes, unsalted
  • 1 Tb Maine Coast Sea Vegetables dulse flakes
  • 6 oz package Champ’s organic crimini mushrooms, thickly sliced
  • 1 stalk organic celery, chopped
  • 1 sprig HerbCo fresh organic tarragon
  • 2 sprigs HerbCo fresh organic rosemary
  • 3.5 oz jar Napoleon anchovies in olive oil
  • 6 oz Hodgson Mill Organic Penne Whole Wheat Gourmet Pasta with Milled Flax Seed
  • 6 oz Cascadian Farms frozen organic peas
  • 4-6 sprigs organic fresh flat leaf organic parsley
  • Black pepper to taste
  • 2-4 Tb Dr. Schulze’s SuperFood Plus powdered natural food supplement (optional)
  • Horizon Organic grated Parmesan cheese (optional)

Methodology

  1. Slice crimini mushrooms and chop celery.
  2. Pull leaves from tarragon, rosemary, and parsley sprigs.
  3. Place frozen peas in a countertop bowl to thaw.
  4. In large stockpot, combine vegetable both, water, olive oil, Muir Glen tomatoes with juices, Maine Coast Sea Vegetables dulse flakes, sliced crimini mushrooms, chopped celery, tarragon, and rosemary.
  5. Add whole jar of anchovies, including olive oil for extra flavor.
  6. Bring to a boil over medium-high heat.
  7. Add Hodgson Mill penne gourmet pasta.
  8. Cook until pasta is a la dente; softened but still firm.
  9. Add thawed Cascadian Farms peas.
  10. Stir in Dr. Schulze’s Superfood natural food supplement. (optional)
  11. Season with pepper to taste.
  12. Garnish with parsley leaves.
  13. Serve sprinkled with Horizon Organic Parmesan cheese. (optional)

Substitutions and Tips

  • Added salt is unnecessary. The dulse flakes and anchovies contain sufficient sodium.
  • Porcini mushrooms make a suitable substitution.
  • If using fresh peas, add with the pasta to allow sufficient cooking time. Never use canned peas unless there is absolutely no other choice.
  • For a vegetarian recipe, leave out the anchovies.

Minestrone Soup Serving Suggestions

Pair with baked organic butternut squash and a simple salad for a wonderful cold weather lunch or dinner. Experiment with different gourmet olive oils and balsamic vinegar for dipping warm slices of sourdough French bread as an appetizer.
